Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Barbecue Corn “Ribs”

Ingredients
1 ears fresh corn
2 Tbsp. olive oil
1 tsp. smoked paprika
1⁄2 tsp. garlic powder
1⁄2 tsp. onion powder
1⁄4 tsp. cayenne pepper or chili powder
Salt to taste
1 lime, cut into wedges
1 Tbsp. fresh parsley or cilantro
Instructions

Step 1
Preheat grill to medium-high heat.

Step 2
Husk corn and trim the ends. Carefully cut each ear in lengthwise into quarters, then in half, creating “ribs.”

Step 3
In a large bowl, toss corn ribs with olive oil, spices and salt.

Step 4
Grill corn ribs for 5-8 minutes until tender and lightly charred.

Step 5
Remove from grill and finish with a squeeze of lime juice and fresh herbs.

Step 6
Serve with a creamy sauce if desired.
