Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Vegan Lemony Hummus Sandwich

Ingredients
2 slices whole wheat bread
1 tbsp plus 1 tsp. olive oil
3 tbsp hummus
1⁄4 cup arugula
1⁄4 cup roasted red pepper
1 tsp lemon juice
1 pinch oregano
Salt and pepper to taste
Instructions
Step 1
In a pan, heat 1 Tbsp olive oil. Toast one side of each slice of bread.
Step 2
Once golden, turn the bread over and add hummus, arugula, 1 teaspoon of, olive oil, lemon juice, oregano, roasted red pepper and salt and pepper to taste. Add the second slice of bread, toasted side down, to the top of the sandwich and flip to finish toasting.
