Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. Toum Recipe: Everyone’s Favorite Garlic Sauce

Serving Amount
Ingredients
1 head garlic, peeled, coarsely chopped
1⁄2 tsp coarse sea salt
3⁄4 cup avocado oil
1 large pasteurized egg white
2 tbsp lemon juice
Instructions
Step 1
Add garlic and salt to a dry food processor or high powered blender. Blend until garlic is well-chopped.
Step 2
Add about 1-2 tablespoons oil until the mixture has formed a paste-like texture.
Step 3
Keep the machine running and add the egg white until the mixture is frothy and white.
Step 4
Let the machine keep running and slowly drizzle in the remaining oil (a thin thread-like stream).
Step 5
Add lemon juice and continue to blend until the consistency is thick and fluffy. Add more salt to taste.
