Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Peach Cobbler Overnight Oats

Ingredients
1⁄3 cup old fashioned oats
1 cup low-fat milk or milk substitute
1 tsp vanilla extract
1⁄4 cup Greek yogurt
2 tsp honey
Pinch of salt
2 tsp chia seeds
2 tbsp chopped pecans
1 peach, diced and divided
2 tbsp almond butter
Instructions
Step 1
Combine and stir all ingredients except peaches and almond butter in two sealable containers, such as mason jars.
Step 2
Stir in half of the peaches, then gently stir in almond butter until not fully incorporated. Add remaining peaches and pecans on top.
Step 3
Leave overnight in the refrigerator and enjoy!
