Grilled Halloumi Pesto Tomato Sandwich

Ingredients
4 ounces halloumi cheese, sliced into ½-inch pieces
4 slices hearty whole grain or sourdough bread
1 large heirloom tomato, sliced
2 Tbsp. basil pesto
1⁄4 cup pickled red onions
Handful of fresh basil leaves
1 Tbsp. olive oil (optional, for brushing bread)
Instructions

Step 1
Heat a grill pan, outdoor grill or nonstick skillet over medium heat.

Step 2
Spray and grill the halloumi for 2 to 3 minutes per side until golden brown with grill marks. If desired, grill the bread too.

Step 3
Spread 1 Tbsp. of basil pesto on each slice of bread. Layer the grilled halloumi, heirloom tomato slices, fresh basil leaves and pickled onions. Close the sandwich and serve immediately while the halloumi is still warm.

- What is halloumi cheese? Halloumi is a semi-hard cheese traditionally made from sheep’s and goat’s milk, although some varieties also contain cow’s milk. It has a mild, salty flavor and a unique texture that becomes crispy on the outside and soft and chewy on the inside when grilled.
