Fall Spiced Pumpkin Granola

This recipe uses a wholesome mix of pumpkin seeds, pecans and dried cranberries to make a delicious, healthy and homemade granola. It can be eaten on its own as a snack or as a topping for a yogurt parfait or smoothie bowl.

Ingredients
  • 2 cups old–fashioned rolled oats

  • 34 cup pumpkin seeds

  • 14 cup pecans, chopped

  • 14 cup dried cranberries

  • 14 cup maple syrup

  • 14 cup canola oil

  • 1 tsp. vanilla extract

  • 12 tsp. salt

  • 1 tsp. cinnamon

  • 12 tsp. ground ginger

  • pinch ground cloves

  • Optional: 1/4 cup chocolate chips

Instructions
  • Step 1

    Preheat oven to 350 degrees F.

  • Step 2

    Combine all dry ingredients and set aside.

  • Step 3

    Combine all wet ingredients and slowly incorporate with dry ingredients. 

  • Step 4

    Place mixture on lined baking sheet and bake for 25-30 minutes.

  • Step 5

    Optional: stir in ¼ cup chocolate chips
