Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.

Ingredients
3 peeled sweet potatoes, peeled and sliced ½-inch thick rounds
1 tbsp 1 tsp. olive oil
1 tsp honey
1⁄3 cup goat cheese
1⁄3 cup pecans, roughly chopped
1⁄3 cup dried cranberries
2 tbsp fresh thyme, chopped
Salt and pepper to taste
Instructions
Step 1
Preheat oven to 400 degrees F.
Step 2
Toss sweet potato slices in 1 tablespoon olive oil, salt, and pepper. Place on a lined baking sheet, leaving spaces in between.
Step 3
Bake for 15-20 minutes until fork-tender. While sweet potatoes are baking, combine cranberries, pecans, thyme, salt, pepper, 1 teaspoon olive oil and honey in a small bowl.
Step 4
Take out sweet potatoes and top with cranberry and pecan mixture. Bake for another 5-8 minutes. Top with goat cheese and serve.
