Happy Peanut Butter & Jelly Day!

It’s true that some of the best things in life are also the simplest. That’s why, when it comes to quick meals, the humble peanut butter and jelly sandwich is one of the most loved.
As every kid knows, you only need soft bread, crunchy peanut butter (okay, it’s creamy for some), and a favorite jam or jelly to create a masterpiece. While you may argue the finer points of assembly (spread your peanut butter all the way to the edges? peanut butter on both pieces or just one? cut in half or on a diagonal?), most agree a PB&J is one of life’s most satisfying combinations.
So to celebrate National PB&J day on April 2nd, we’ve come up with some twists to the classic sandwich.
Peanut butter, jelly and banana roll-up: Spread peanut butter on a low-fat tortilla, covering it entirely. Add several spoonfuls of strawberry preserves and spread over peanut butter but not to the edges. Place a peeled banana on one side and roll up tightly. Cut on the diagonal into three pieces.
PB&J waffle sandwich: Toasted peanut butter and jelly sandwiches are amazing, but the melted peanut butter can ooze out the sides. Our fix: Try substituting waffles for the bread. Use whole wheat or other frozen waffles or make your own. Spread peanut butter on one warm waffle and jelly on the other, then sandwich together to eat. Fork is optional!
Peanut butter, apricot jam and tomato: Try adding a slice of fresh tomato and apricot jam to the sandwich. It may sound a little weird, but this combo is super tasty.
And if you are ready to try something really different, go for a peanut butter, baked beans and grape jelly sandwich. Take a soft hamburger bun and spread peanut butter on the bottom and grape jelly on the top. Add a spoonful or two of hot baked beans to the bottom bun and cover with top bun. Don’t cut this sandwich or you’ll have a mess – just pick it up and enjoy. As odd as it sounds, this tastes great!
