Tomato Avocado Cucumber and Goat Cheese Salad with Balsamic Dressing

With tangy goat cheese and smooth avocado, this fresh salad is both full of nutrients and satisfying.
Made without greens, this recipe changes up the usual salad recipe. You can get creative with this dish by adding in diced bell pepper for extra crunch. Fresh basil and oregano rather than dried herbs can provide garden-fresh flavor to the balsamic dressing.
If you don't like goat cheese, try feta or mozzarella balls. You can also leave out the cheese for a dairy-free salad. Add chickpeas, beans, grilled chicken or hard-boiled eggs for protein, or serve this salad along with grilled chicken or fish as a colorful, delicious side dish.

Ingredients
  • 2 cups cherry tomatoes

  • 1 cucumber, sliced and quartered

  • 2 avocados, diced

  • 212 ounces crumbled goat cheese

  • 7 Tbsp. olive oil

  • 4 Tbsp. balsamic vinegar

  • 2 tsp. Dijon mustard

  • 18 tsp. ground black pepper

  • 14 tsp. salt

  • 12 tsp. dried basil

  • 12 tsp. dried oregano

Instructions
  • Step 1

    Slice the tomatoes in half and quarter the cucumber, then add both to a large bowl.

  • Step 2

    In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, dried oregano, dried basil, salt and pepper until the dressing is smooth and well blended.

  • Step 3

    Drizzle some of the balsamic dressing over the tomatoes and cucumbers, then gently toss to coat everything.

  • Step 4

    Fold in the diced avocado and crumbled goat cheese, then gently toss again. Add more dressing to taste and serve fresh.
