Modern holiday breakfast: Marmalade French Toast Casserole

With wrapping paper spread across the family room floor and exciting new toys and gadgets to play with, who has time to think about a healthy Christmas morning breakfast? Instead of scrambling to keep stomachs full, plan ahead the night and make a casserole. They taste great, let you use good-for-you ingredients and can taste like you slaved away in the kitchen for hours! Plus, they’re easily transportable if you’re spending the holiday at a relative’s house.
Though most breakfast casseroles are egg-based and resemble a giant frittata, this one is sweeter and mimics French toast.
Ingredients
- 3 tablespoons butter, softened
- 16-ounce sourdough French bread loaf, cut into 24 (1/2-inch) slices
- Cooking spray
- 12-ounce jar orange marmalade
- 2 ¾ cups 1% low-fat milk
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon ground nutmeg
- 6 large eggs
- 1/3 cup finely chopped walnuts
Instructions
- Spread butter on one side of each bread slice. In a 13 x 9-inch baking dish coated with cooking spray, arrange 12 bread slices, buttered side down, in a single layer.
- Evenly spread marmalade over the bread and top with remaining 12 bread slices, buttered side up.
- In a separate bowl, combine milk, sugar, vanilla extract, nutmeg and eggs. Pour egg mixture over bread; cover and refrigerate for 8 hours (or overnight).
- When ready to bake, preheat oven to 350 degrees.
- Sprinkle casserole with walnuts. Bake for 45 minutes or until golden.
- Let stand for 5 minutes before serving. Serve with honey or Michigan maple syrup and enjoy!
