Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. Cranberry Mule Mocktail with Dried Citrus Garnish

This cozy drink features a balance of tart and sweet, with a hint of gingery spice. Allow frozen cranberries to double as ice and decorate with a dried citrus wheel.

Ingredients
  • 12 cup cranberry juice cocktail

  • 1 lime, juiced

  • 14 cup ginger beer

  • 1 cup frozen cranberries

  • Ice cubes as needed

  • 1 cup sparkling water

  • Dried citrus wheels (slices), such as orange, lemon or lime

Instructions
  • Step 1

    In a shaker bottle, add cranberry juice and lime juice. Shake then pour over frozen cranberries and ice if desired in a glass.

  • Step 2

    Add ginger beer and sparkling water to top the drink and stir gently to avoid losing carbonation. Garnish each drink with dried citrus wheel.
