Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. Cracked Chocolate Pumpkin Overnight Oats

Ingredients
1⁄2 cup Greek yogurt
1 cup oat milk or other milk substitute
1⁄4 cup pumpkin puree
2 tsp. honey
1⁄2 tsp. vanilla extract
2⁄3 cup old-fashioned oats
3 tsp. chia seeds
1 pinch salt
1⁄4 tsp. cinnamon
1⁄2 tsp. pumpkin pie spice
1⁄4 cup 60% dark chocolate chips (darker chocolate likely won’t melt)
1 tsp. coconut oil
Instructions
Step 1
In a medium bowl, mix all ingredients except chocolate and coconut oil.
Step 2
Pour the mixture into glass jars or other containers. Cover and place in the fridge for 4 hours or overnight.
Step 3
Pour chocolate chips and coconut oil into a small microwave-safe container. Microwave for 30 seconds, then stir, repeating until chocolate runs easily, but isn’t crumbly.
Step 4
Pour the chocolate over the overnight oats. Allow to set for 5 minutes in the fridge. Enjoy!
