Protein-rich cottage cheese provides a creamy base for a fresh cherry salsa that balances sweet and tangy flavors. This toast works well for breakfast or a satisfying snack and is a simple way to incorporate seasonal fruit into everyday meals.

  • 2 slices whole grain bread, toasted

  • 1 cup cottage cheese

  • 1 cup fresh cherries, pitted and finely chopped

  • 1 Tbsp. fresh basil, chopped

  • 2 Tbsp. chopped walnuts

  • 1 tsp. balsamic reduction

  • Pinch of salt

Instructions

    In a small bowl, combine chopped cherries, basil, walnuts and salt. Stir gently and allow the mixture to sit for 5 minutes.

    Spread cottage cheese evenly over the toasted bread. Spoon the cherry salsa over the cottage cheese. Serve immediately.
