Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Chocolate-drizzled Coconut Date Cookies

12 oz dates, pitted
3⁄4 cup coconut flakes
1⁄2 cup dark melting chocolate chips
Instructions
Step 1
In a blender or food processor, add dates and a splash of hot water until mixture is smooth. Add coconut flakes and blend again.
Step 2
On parchment or wax paper, form a desired cookie shape out of 1.5 tablespoons of the coconut date mixture. Place in freezer for 1 hour.
Step 3
Once cookies are cool enough to handle, prepare the melting chocolate chips according to package instructions. Dip the cookies in the chocolate and place on parchment or wax paper. Drizzle with remaining chocolate and freeze for another hour. Enjoy!
