Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Honeycrisp Tuna Melt

Ingredients
1 package sweet and spicy tuna
1 stalk celery, finely chopped
2 Tbsp. light mayonnaise
2 slices whole wheat bread
spray oil
2 slices Swiss cheese
1 Campari tomato, thinly sliced
4 leaves iceberg lettuce
1⁄2 Honeycrisp apple, thinly sliced
Instructions
Step 1
In a mixing bowl, add spicy tuna package, light mayonnaise and celery. Mix until well combined.
Step 2
Heat a large pan to medium. Add spray oil. Once hot, add bread slices.
Step 3
Once one side of the bread is golden, flip then add cheese to two of the slices to allow it to melt.
Step 4
Once cheese is melted, add tuna mixture, tomato slices, lettuce leaves and sliced apples. Add the top bread then cut diagonally. Enjoy!
