Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. Healthier Turtle Apple Pops

Ingredients
4 Honeycrisp apples
popsicle sticks
1⁄2 cup dark chocolate chips (60% cocoa)
1⁄4 cup caramel
3 Tbsp. walnuts, chopped
1 Tbsp. lemon juice, optional
Instructions
Step 1
Slice apples into 1/2-inch thick slices.
Step 2
Place a popsicle stick into the bottom of the apple slices. Skip the piece with the core.
Step 3
In a microwaveable safe bowl. Add chocolate chips and microwave at 1-minute intervals, stirring each time until melted.
Step 4
Dip the top of the apple pops in dark chocolate, then drizzle with caramel and sprinkle with chopped walnuts.
Step 5
Add pops to a parchment paper-lined plate and place in the fridge until hardened.
Step 6
Optional, if planning to store, brush lemon juice on the exposed part of the apple to promote freshness. Store in fridge covered for up to 4 days.
