Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan based in Detroit. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. She earned her Master of Science in Public Health Nutrition from the University of Tennessee and has a research background in maternal and child health nutrition and public health, as well as a Certificate of Training in Obesity Interventions from the Commission on Dietetic Registration. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.
Asian-inspired Edamame Guacamole

Serving Amount
Ingredients
2 tsp chili garlic sauce
1 tsp soy sauce
1⁄2 Juice from lime
1 green onion stalk, chopped
1 clove large garlic, finely minced
3 tbsp cilantro, finely chopped
1⁄2 cup edamame, steamed
2 avocados
1 Roma tomato, diced
Salt and pepper to taste
2 tsp sesame seeds (or Everything but the Bagel Seasoning from this recipe)
Instructions
Step 1
Pulse steamed edamame in a food processor or blender with soy sauce and lime juice until smooth.
Step 2
In a bowl, add all ingredients except sesame seeds and gently mash avocado to combine with ingredients until it has reached desired texture. Sprinkle sesame seeds on top.
Step 3
Enjoy with chips, on toast or with a salad or rice bowl.
